Father’s Day at Cali BBQ is a blur of phone calls, takeout orders, and packed dining rooms. This year, Shawn Walchef decided to try something new. His digital twin stepped in: Shawn AI, a voice-trained agent built with Palona ai.

The results surprised everyone. Sales jumped 18 percent. Takeout orders soared 92 percent. Support calls dropped 25 percent. And for the first time in years, the dining room actually felt calm on the busiest day of the year.

A Different Kind of Hospitality

For Eric Olafsen, the longtime manager, the phones are usually the enemy on holidays. “Thank you for calling Cali BBQ, please hold,” is on repeat while stressed staff scramble to handle in-person guests. This year, Shawn AI picked up over 150 calls. Each one meant a few more minutes for staff to focus on food, service, and guests in the building.

It worked. Dine-in sales went up 32 percent. Table turns dropped by 18 minutes. Guests were happier, and so were employees.

Even Shawn’s family got in on the experiment. His wife called the AI version of her husband. So did Eric, who has worked with him for nearly two decades. Both admitted it sounded eerily real.

“The coolest part for me was watching it learn,” Shawn said. “The more we fed it, the better it got.”

Was It Shawn or Shawn AI?

Of course, Cali BBQ couldn’t resist having a little fun with the technology. Staff hosted a game show called “Was it Shawn or Shawn AI?” Contestants guessed whether quotes like “Great BBQ isn’t fast, it’s earned low and slow every time” came from the real Shawn or his AI twin.

Sometimes they got it right. Sometimes they didn’t. And that was the point. The digital voice was believable enough to keep everyone guessing.

Beyond the Buzzword

For Shawn, the experiment wasn’t about replacing staff. It was about giving them space to be more present with guests.

“If you are a restaurant owner and you are scared of artificial intelligence, implementing Shawn AI allowed us to be more empathetic, more accurate, and more consistent with our guests at the busiest time of our business,” he said.

The Father’s Day test proved it. AI answered the calls. Humans answered the tables. Together, they created hospitality at scale.
