At the Pizza Expo and Bar & Restaurant Show in Las Vegas, two industry leaders shared a message every independent operator needs to hear: if you’re not telling your story, you’re invisible. Matt Plapp, CEO of America’s Best Restaurants, and veteran restaurant coach David Scott Peters joined Shawn Walchef on Digital Hospitality to talk about energy, clarity, and the future of independent restaurants.
Peters, who proudly calls himself the first restaurant coach on earth, has spent more than two decades helping operators gain freedom from the daily grind. His advice is clear: chains don’t win because they run smoother; they win because they market better. “You share your story, your why, your core values, and people will choose you over a chain any day of the week,” he said.
Time For The Road Show
Plapp has built his career on that principle. Through America’s Best Restaurants and the ABR Roadshow, his team has filmed more than 2,500 social-first episodes showcasing local operators. “It’s all about helping restaurants stop being ghosts on social media,” he explained. By giving independents visibility on their own platforms, he’s helping them build loyalty that lasts.
Storytelling Is A Must
Storytelling, both men argue, isn’t just marketing fluff. It’s survival. Customers today want more than food; they want to feel a connection. They want to know the people behind the menu and the values behind the brand. Operators who stay silent risk fading into the background while chains dominate attention with polished campaigns. Those who step forward, on the other hand, transform their restaurants into communities that customers rally around.
Both leaders urged operators to leave their four walls and connect with the industry. Peters described it as a growth mindset: “If you come away with just two ideas, they can change your world.” Plapp added that shows like Pizza Expo are also about energy. “It’s lonely being a business owner. Get out and hang around people that lift you up. I go back from events like this fired up.”
YouTube Is Next
The conversation also highlighted YouTube as the next frontier. Unlike TikTok or Instagram, it demands commitment, but delivers deep storytelling and evergreen content. Walchef, Plapp, and Peters have all gone “all in,” betting that the platform will define the next era of restaurant marketing.
