Anthony Valletta once told his entire staff they could leave if they did not want to be there. Then they did.

On a Friday morning, as a young and wildly overconfident general manager, Valletta watched every employee quietly walk out of the restaurant together after he dismissed constant comparisons to the previous GM. One minute he had a team. The next minute he had an empty dining room and a career-defining lesson.

Most executives bury stories like that. Valletta leads with it. Not because it makes him look good. Because it explains everything about how he thinks now.

Today, Valletta leads bartaco across 14 states and more than 30 locations, but his philosophy is still rooted in that moment. Restaurants are not built by strategy decks. They are built by people who believe in what they are creating together. That belief shows up in unexpected places.

Valletta believes hospitality breaks the moment operators start scripting humanity too tightly. Too many restaurants obsess over policies, comp limits, and rigid systems while forgetting the point entirely. His teams are encouraged to make judgment calls. Create moments. Fix problems like actual humans instead of approval-seeking robots.

To Valletta, the ninety seconds after a mistake matters more than the ninety minutes before it.

Community Inside The Walls

That philosophy extends beyond service. As bartaco has expanded, Valletta has become increasingly obsessed with protecting individuality inside each restaurant. Growth can flatten brands if every new location starts feeling interchangeable. He fights against that aggressively.

The Charleston bartaco sits inside a historic alleyway structure with brick walls dating back to the 1800s. Reclaimed iron pulled from around the city became part of the restaurant’s design. A local muralist painted pieces throughout the space.

Auction finds became host stands. In Massachusetts, records from hometown reggae band Stick Figure sit tucked into shelves because locals recognize them instantly. Most guests may never consciously notice those details. That is exactly the point.

Valletta understands hospitality is often subconscious. It is the feeling that something belongs before you can explain why.

The Importance Of Leadership

The same thinking shapes how he views leadership inside the company. He believes the general manager role should be the most respected position in the organization, including above his own. Not symbolically. Operationally.

These are people running multimillion-dollar businesses, leading large staffs, managing guest experience, controlling culture, solving problems, and acting as the face of the brand inside their communities every day. Valletta believes the industry has dramatically undervalued how difficult that role really is.

So bartaco tries to build around protecting it. Less unnecessary noise. Better support. More trust.

Because if the staff is happy and the guests are happy, most other problems eventually solve themselves.

Digital Hospitality

Valletta’s approach to technology follows the same principle. Tools should remove friction, not replace connection. That is why bartaco’s digital strategy has shifted away from simply posting polished food photography. Beautiful cocktail shots do not create emotional attachment anymore. Feeling does.

The company has spent the last year refining how the brand shows up online so the vibe feels consistent whether someone visits Instagram, opens an email, joins a waitlist, or walks into a restaurant. Music. Energy. Design. Playfulness. That is the real product.

Even Valletta’s definition of loyalty pushes against industry convention.

He does not think most loyalty programs actually create loyalty. They create frequency. Real loyalty, in his eyes, is when someone voluntarily becomes an ambassador for the brand. Someone who brings friends without being asked. Someone who talks about the experience because it genuinely meant something to them.

That mindset also explains why his personal cell phone number sits at the bottom of every bartaco receipt.

And they do.

Every single day.

Because for all the conversation around AI, data, automation, and scaling restaurants, Valletta still believes the most powerful thing a hospitality company can offer is simple.

A real human being who cares.
