Unlike traditional vending operations, where restaurants take financial risks by selling at unpredictable events, Billy Bricks’ mobile business is structured differently. “Ninety-five percent of what we do is built on pre-booked catering and events,” Gruber explained. “We know exactly what we’re making before we even fire up the oven.”
The mobile expansion has also become a key marketing tool. “For all of us, the ideal scenario is people eating our food fresh, right out of our kitchens. If you can bring your kitchen to them, you’re giving them dinner and a show,” he said.

Like any seasoned operator, Gruber has learned the hard way that not every expansion works. “Oh, we’ve had failures. Plenty of them,” he admitted. “But I’ve learned to trust my gut. If I feel something isn’t going to work, I don’t second-guess it anymore.”
One of the biggest early mistakes, he recalled, was giving up too much control in business deals. “We had good people in good locations, but we gave up too much flexibility. And when you don’t have control, you can’t pivot when things go sideways,” he said.
Now, Gruber is laser-focused on financial health, ensuring Billy Bricks operates without debt and reinvests wisely. “Cash flow is everything,” he emphasized. “That’s what lets us take care of our people, upgrade our spaces, and grow—without answering to banks and investors.”

While many restaurant owners focus solely on promoting their business, Gruber has taken a different approach—building his own personal brand alongside Billy Bricks. “You don’t just want people to know your restaurant; you want them to know you,” he said.
For Gruber, personal branding isn’t just about self-promotion—it’s about connection. “If I want to open another concept one day, I need my name to carry weight,” he said. “I don’t want to start from zero just because I sold Billy Bricks.”
His latest content initiative, Hitting the Bricks, is a prime example. The video series features Gruber visiting other restaurants, trying their most viral dishes, and then recreating them as pizzas in his food truck. “It’s fun, it’s engaging, and it lets people see my personality,” he said.
The strategy is already paying off. “When people see me eating a beef sandwich in the middle of a Chicago winter with no jacket, they get it—they see the real me,” he said with a laugh. “That kind of authenticity is what makes people connect with you, not just your business.”
